Ingredients
  

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup apple butter
  • 1/2 cup buttermilk
  • 1/4 cup chopped walnuts optional

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Grease a 9-inch round cake pan and set aside.
  • In a medium mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • In a large mixing bowl, beat the butter and sugar until light and fluffy.
  • Add the eggs one at a time to the butter mixture, beating well after each addition.
  • Mix in the vanilla extract.
  • Alternate adding the dry ingredients and buttermilk to the butter mixture, beginning and ending with the dry ingredients.
  • Fold in the apple butter and walnuts.
  • Pour the batter into the prepared cake pan and smooth the top.
  • Bake for 35 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes before transferring it to a cooling rack to cool completely.

Notes

For a richer flavor, consider using homemade apple butter, and for a more moist texture, do not overmix the batter. If you prefer a little crunch, the walnuts add a great texture, but they can be omitted for a nut-free version. Serve the cake warm or at room temperature, and consider topping it with a dollop of whipped cream or a scoop of vanilla ice cream for an extra treat.
