Ingredients
  

  • 8 ounces pasta of choice
  • 2 tablespoons olive oil
  • 1 pound chicken breast boneless and skinless
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 cups cherry tomatoes halved
  • 2 cloves garlic minced
  • 1/4 cup balsamic vinegar
  • 1/4 cup fresh basil leaves chopped
  • 1/2 cup Parmesan cheese grated

Instructions
 

  • Cook the pasta according to package instructions, then drain and set aside.
  • Heat olive oil in a large skillet over medium heat.
  • Season the chicken breast with salt, pepper, and Italian seasoning.
  • Add the chicken to the skillet and cook for 6-7 minutes on each side until fully cooked.
  • Remove the chicken from the skillet and let it rest for 5 minutes before slicing.
  • In the same skillet, add cherry tomatoes and garlic, cooking for 2-3 minutes until tomatoes are softened.
  • Stir in balsamic vinegar and let it simmer for 2 minutes.
  • Add the cooked pasta to the skillet and toss to coat with the tomato mixture.
  • Stir in the sliced chicken and fresh basil.
  • Serve hot, topped with grated Parmesan cheese.

Notes

For extra tips, ensure the chicken is cooked through by checking for an internal temperature of 165°F. To enhance the flavor, marinate the chicken in the seasoning for a few hours before cooking. Use fresh, high-quality tomatoes and basil for the best taste. If you prefer a creamier sauce, add a splash of cream or a dollop of mascarpone cheese when tossing the pasta with the tomato mixture.
