Ingredients
  

  • 2 tablespoon olive oil
  • 1 large onion chopped
  • 3 clove garlic minced
  • 2 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1 14-ounce can diced tomatoes
  • 2 15-ounce can chickpeas drained and rinsed
  • 4 cup vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cup fresh spinach roughly chopped
  • 1 tablespoon lemon juice

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and sauté for 5 minutes until translucent.
  • Stir in minced garlic and cook for an additional 1 minute.
  • Add ground cumin, coriander, smoked paprika, and cayenne pepper, and cook for 1 minute until fragrant.
  • Pour in diced tomatoes and bring to a simmer.
  • Add chickpeas and vegetable broth, stirring to combine.
  • Season with salt and black pepper.
  • Cover the pot and let simmer for 30 minutes.
  • Stir in chopped spinach and cook for 5 minutes until wilted.
  • Remove from heat and stir in lemon juice.
  • Allow stew to rest for 10 minutes before serving.

Notes

To enhance the flavor of the stew, consider preparing it a day in advance as the flavors tend to develop overnight. Feel free to adjust the spice levels by adding more cayenne pepper for heat or extra lemon juice for freshness. Serve with crusty bread or over a bed of rice for a complete meal.
