Chili Colorado Shepherd’s Pie

Ingredients
  

  • 1 pound ground beef
  • 1/2 pound chorizo
  • 1 tablespoon olive oil
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 tablespoon tomato paste
  • 2 cup beef broth
  • 2 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 4 large potatoes peeled and cubed
  • 1/2 cup milk
  • 2 tablespoon butter
  • 1/2 cup shredded cheddar cheese

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Heat olive oil in a large skillet over medium heat.
  • Add the chopped onion and minced garlic to the skillet and sauté until translucent.
  • Add ground beef and chorizo to the skillet and cook until browned.
  • Stir in tomato paste, mixing well with the meat.
  • Add beef broth, chili powder, cumin, smoked paprika, salt, and pepper to the skillet and bring to a simmer.
  • Stir in corn and peas, and allow the mixture to simmer for 10 minutes.
  • Boil potatoes in a large pot of salted water until tender.
  • Drain the potatoes and return them to the pot.
  • Add milk and butter to the potatoes, and mash until smooth.
  • Spoon the meat mixture into a baking dish in an even layer.
  • Spread the mashed potatoes evenly over the meat mixture.
  • Sprinkle shredded cheddar cheese on top of the mashed potatoes.
  • Bake in the preheated oven for 30 minutes until the top is golden and bubbly.
  • Let the dish rest for 10 minutes before serving.

Notes

For best results, make sure to use a combination of ground beef and chorizo to bring out the rich flavors in this dish. Adjust the spice level by adding more or less chili powder based on your preference. Allowing the pie to rest after baking helps the layers to set, making serving easier.
