Ingredients
  

  • 2 pounds boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 cups chicken broth
  • 8 ounces cream cheese softened
  • 1 cup grated Parmesan cheese
  • 2 cups heavy cream
  • 8 ounces penne pasta
  • 1 cup frozen peas
  • 1/4 cup chopped fresh parsley

Instructions
 

  • Cut the chicken breasts into bite-sized pieces.
  • In the crockpot, add olive oil and evenly coat the bottom.
  • Place chicken pieces in the crockpot and season with salt, pepper, garlic powder, and onion powder.
  • Pour chicken broth over the seasoned chicken.
  • Cover the crockpot and cook on low for 3 hours.
  • After 3 hours, add cream cheese, Parmesan cheese, and heavy cream to the crockpot.
  • Stir the mixture until the cheeses are melted and well combined.
  • Add penne pasta and frozen peas to the crockpot.
  • Stir and cover again, continuing to cook for an additional 30 minutes or until the pasta is tender.
  • Once done, let the dish rest for 5 minutes before serving.
  • Garnish with fresh parsley before serving.

Notes

For best results, ensure the cream cheese is softened to prevent clumping, and occasionally stir the pasta during the last 30 minutes to ensure even cooking. Adjust the consistency of the sauce by adding more chicken broth if it becomes too thick.
