Ingredients
  

  • 200 grams Feta cheese block
  • 300 grams cherry tomatoes
  • 250 grams pasta of choice
  • 3 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup fresh basil leaves chopped
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 200°C (400°F).
  • Place the block of feta cheese in the center of a baking dish.
  • Surround the feta with cherry tomatoes.
  • Drizzle olive oil over the feta and tomatoes.
  • Add minced garlic, dried oregano, and red pepper flakes over the top.
  • Bake in the preheated oven for 25-30 minutes, until the tomatoes are bursting and feta is soft.
  • Meanwhile, cook the pasta in a pot of boiling salted water until al dente.
  • Drain the pasta using a colander and set aside.
  • Once the feta and tomatoes are baked, remove the dish from the oven.
  • Use a wooden spoon to mix and mash the feta and tomatoes together in the dish.
  • Add cooked pasta to the dish and stir until well combined with the feta and tomato mixture.
  • Season with salt and pepper to taste.
  • Garnish with fresh basil leaves before serving.
  • Allow the dish to rest for 5 minutes before serving.

Notes

For best results, use high-quality feta cheese and ripe cherry tomatoes to ensure maximum flavor. Feel free to add other vegetables like spinach or bell peppers for an extra nutritional boost. Adjust the amount of red pepper flakes based on your spice preference.
