Ingredients
  

  • 2 filet mignon steaks
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon butter
  • 1/4 cup brandy
  • 1 cup heavy cream
  • 2 tablespoons green peppercorns
  • 1 tablespoon Dijon mustard

Instructions
 

  • Preheat the sauté pan over medium-high heat.
  • Rub the filet mignon steaks with olive oil, salt, and black pepper.
  • Sear the steaks in the pan for 3 minutes on each side or until desired doneness.
  • Remove the steaks from the pan and let them rest for 5 minutes.
  • In the same pan, add butter and melt over medium heat.
  • Pour brandy into the pan and deglaze, scraping the bottom with a whisk.
  • Add heavy cream and bring to a simmer.
  • Stir in green peppercorns and Dijon mustard, cooking until the sauce thickens.
  • Serve the steaks with the peppercorn sauce drizzled on top.

Notes

For perfect results, ensure the steaks are at room temperature before cooking to allow even cooking throughout. Use a meat thermometer to check for the desired doneness, with 135°F for medium-rare. Searing the steaks in a hot pan helps create a flavorful crust, and resting them allows the juices to redistribute, keeping the meat tender and juicy.
