  • 1 Spatula
  • 1 Butter knife
  • 1 Cutting board

Ingredients
  

  • 4 slices whole grain bread
  • 4 oz goat cheese softened
  • 1 tablespoon olive oil
  • 1 cup arugula
  • 1 medium tomato sliced
  • salt to taste
  • pepper to taste

Instructions
 

  • Preheat the non-stick skillet over medium heat.
  • Spread the goat cheese evenly on one side of each bread slice.
  • Layer arugula and tomato slices over the goat cheese on two slices of bread.
  • Sprinkle salt and pepper over the tomato slices.
  • Top with the remaining slices of bread, cheese side down.
  • Lightly brush the outside of the sandwiches with olive oil.
  • Place the sandwiches in the skillet and cook for about 2-3 minutes per side until golden brown.
  • Use a spatula to press down gently and flip the sandwiches.
  • Remove from the skillet once the bread is crispy and the cheese is melted.
  • Let cool slightly before serving.

Notes
