Ingredients
  

  • 2 pound pork shoulder diced
  • 2 tablespoon olive oil
  • 1 large onion chopped
  • 3 clove garlic minced
  • 2 cup chicken broth
  • 1 cup roasted green chilies chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large potatoes peeled and diced
  • 1/4 cup fresh cilantro chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add diced pork shoulder and brown on all sides.
  • Remove pork from the pot and set aside.
  • In the same pot, add chopped onion and sauté until translucent.
  • Add minced garlic and cook for another minute.
  • Pour in chicken broth and bring to a simmer.
  • Return the pork to the pot.
  • Stir in the green chilies, cumin, oregano, salt, and black pepper.
  • Add diced potatoes and mix well.
  • Cover the pot and simmer for 1 hour until pork and potatoes are tender.
  • Stir occasionally to prevent sticking.
  • Remove from heat and let the stew rest for 10 minutes.
  • Garnish with chopped cilantro before serving.

Notes

For the best flavor, use freshly roasted green chilies if available, as they add an authentic smoky taste to the stew. Adjust the level of spice by choosing mild, medium, or hot chilies according to your preference. Cooking the stew slowly allows the flavors to meld beautifully, resulting in a rich and hearty dish.
