Ingredients
  

  • 2 pounds pork shoulder cubed
  • 2 tablespoons vegetable oil
  • 1 large onion diced
  • 4 cloves garlic minced
  • 2 cups chicken broth
  • 1 cup roasted green chilies chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh cilantro chopped

Instructions
 

  • Heat vegetable oil in a large pot over medium-high heat.
  • Add cubed pork shoulder and sear until browned on all sides.
  • Remove pork from the pot and set aside.
  • In the same pot, add diced onion and garlic, and sauté until onion is translucent.
  • Return pork to the pot and add chicken broth, stirring to combine.
  • Stir in roasted green chilies, cumin, oregano, salt, and black pepper.
  • Bring the mixture to a boil, then reduce heat to low and cover.
  • Simmer for 1.5 to 2 hours, until the pork is tender.
  • Remove from heat and let it rest for 10 minutes.
  • Stir in chopped cilantro before serving.

Notes

For an enhanced flavor, consider roasting your own green chilies instead of using canned ones. You can adjust the spice level by adding more or fewer chilies according to your preference. If you prefer a thicker chili, let it simmer uncovered for the last 30 minutes to reduce the liquid. This dish pairs well with warm tortillas or rice.
