Ingredients
  

  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 medium apple peeled, cored, and chopped

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease the loaf pan.
  • In a large mixing bowl, whisk together the pumpkin puree, vegetable oil, eggs, vanilla extract, and granulated sugar until smooth.
  • In a medium mixing bowl, combine the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Fold in the chopped apple with a spatula until evenly distributed.
  • Pour the batter into the prepared loaf pan and spread it evenly.
  • Bake in the preheated oven for 60 minutes or until a toothpick inserted into the center comes out clean.
  • Remove the bread from the oven and let it cool in the pan for 15 minutes.
  • Transfer the bread to a cooling rack to cool completely before slicing.

Notes

For best results, ensure your ingredients are at room temperature before you begin mixing. This will help the batter combine more smoothly and ensure even baking. It's also important to not overmix once the dry ingredients are added to maintain a light texture in the bread. Store any leftovers in an airtight container to keep the bread moist and flavorful.
