Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 cup brown sugar packed
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup chocolate chips optional

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Line a baking sheet with parchment paper.
  • In a mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the pumpkin puree, eggs, and vanilla extract to the creamed mixture and mix until combined.
  • In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  • Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  • Fold in chocolate chips, if using.
  • Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 12 minutes or until the edges are lightly golden.
  • Remove from the oven and let the cookies rest on the baking sheet for 5 minutes.
  • Transfer the cookies to a cooling rack to cool completely.

Notes

For best results, ensure the butter is softened to room temperature before mixing to achieve a smooth dough. If you prefer spicier cookies, consider adding a pinch of cloves or allspice to the dry ingredients. Storing cookies in an airtight container will keep them fresh for up to a week, and you can freeze the dough for later use if desired.
