Ingredients
  

  • 4 slices bread
  • 4 large eggs
  • 1/2 cup milk
  • 1/2 cup pumpkin puree
  • 2 tablespoons brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 pinch salt
  • 2 tablespoons butter
  • maple syrup for serving

Instructions
 

  • In a large mixing bowl, whisk together the eggs, milk, pumpkin puree, brown sugar, vanilla extract, cinnamon, nutmeg, ginger, and salt until well combined.
  • Heat a frying pan or griddle over medium heat and add 1 tablespoon of butter to melt.
  • Dip a slice of bread into the pumpkin mixture, ensuring both sides are well coated.
  • Place the coated bread slice onto the hot frying pan and cook for 3-4 minutes on each side or until golden brown.
  • Repeat the process with the remaining slices of bread, adding more butter to the pan as needed.
  • Once all slices are cooked, let them rest for 5 minutes to firm up slightly.
  • Serve warm with a drizzle of maple syrup.

Notes

For best results, use thick-cut bread like brioche or challah, which can absorb the pumpkin mixture without becoming soggy. Make sure the frying pan is well-heated before adding the bread to ensure a crisp exterior. Adjust spices to taste if you prefer a stronger or milder flavor.
