Ingredients
  

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1/2 teaspoon salt divided
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion finely chopped
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped

Instructions
 

  • Combine quinoa, water, and 1/4 teaspoon salt in a saucepan and bring to a boil.
  • Reduce heat, cover, and simmer for 15 minutes until quinoa is tender and water is absorbed.
  • Remove from heat and let quinoa rest for 5 minutes, then fluff with a fork.
  • Whisk olive oil, lemon juice, oregano, remaining salt, and pepper in a bowl to create the dressing.
  • Combine cooked quinoa, cherry tomatoes, cucumber, red onion, feta cheese, and parsley in a large bowl.
  • Pour the dressing over the salad and toss to combine.
  • Serve immediately or chill for later use.

Notes

For an extra burst of flavor, consider adding a pinch of red pepper flakes to the dressing for a slight kick. Additionally, ensure that the quinoa is thoroughly rinsed before cooking to remove any bitterness. This salad can be served warm or cold, making it a versatile dish for any occasion.
