Ingredients
  

  • 2 cup all-purpose flour
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup powdered sugar
  • 1/4 cup heavy cream
  • 1 cup chocolate chips melted

Instructions
 

  • Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a mixing bowl, cream together the butter and granulated sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • In another bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry mixture to the wet ingredients, mixing until a dough forms.
  • Roll out the dough on a floured surface to about 1/4 inch thickness.
  • Use a cookie cutter to cut out cookies and place them on the prepared baking sheets.
  • Bake in the preheated oven for 8-10 minutes or until the edges are lightly golden.
  • Transfer cookies to a cooling rack and let them cool completely.
  • For the filling, whisk together powdered sugar and heavy cream until smooth.
  • Spread a small amount of the filling on the bottom side of one cookie.
  • Place another cookie on top to create a sandwich.
  • Dip half of the sandwich cookie into the melted chocolate and let it set.
  • Repeat with remaining cookies and allow them to rest until the chocolate is firm.

Notes

For extra tips, ensure that the butter is at room temperature for easier mixing and a better texture. When rolling out the dough, keep it uniform in thickness to ensure even baking. If the dough becomes too soft while working, refrigerate it for a few minutes to firm it up. For a flavor twist, consider adding a hint of almond extract or a sprinkle of sea salt on the chocolate-dipped side.
