Ingredients
  

  • 1 pound sausage sliced
  • 2 tablespoons olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 3 carrots sliced
  • 2 potatoes diced
  • 14 ounces diced tomatoes
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen peas

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add sausage slices and cook until browned on all sides.
  • Remove sausage from the pot and set aside.
  • In the same pot, add chopped onion and cook until translucent.
  • Add minced garlic and cook for another minute.
  • Stir in carrots and potatoes, cooking for 5 minutes.
  • Pour in the diced tomatoes with their juices and chicken broth.
  • Return sausage to the pot.
  • Add thyme, salt, and black pepper, stirring well.
  • Bring the stew to a boil, then reduce to a simmer.
  • Cook uncovered for 30 minutes or until vegetables are tender.
  • Add frozen peas and cook for an additional 5 minutes.
  • Remove from heat and let stew rest for 10 minutes before serving.

Notes

For extra flavor, consider using a mix of different types of sausages, such as spicy Italian or smoked, to add depth to the stew. Additionally, feel free to add other vegetables like bell peppers or mushrooms based on personal preference. Adjust the level of seasoning to your taste, and remember that the stew often tastes even better the next day after the flavors have had more time to meld.
