Ingredients
  

  • 2 pounds ground beef
  • 1 quart water
  • 2 large onions finely chopped
  • 2 cloves garlic minced
  • 1 can tomato sauce (15 ounces)
  • 2 tablespoons vinegar
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons chili powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cumin
  • 1 teaspoon ground allspice
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon ground cloves
  • 1 tablespoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf

Instructions
 

  • In a large pot, crumble the ground beef and add water.
  • Bring the mixture to a boil, stirring to break up the meat.
  • Reduce the heat and simmer for 30 minutes, skimming off any foam.
  • Add the onions and garlic to the pot and stir well.
  • Mix in the tomato sauce, vinegar, and Worcestershire sauce.
  • Stir in chili powder, cinnamon, cumin, allspice, cayenne pepper, cloves, salt, and black pepper.
  • Add the bay leaf and stir until everything is well combined.
  • Let the chili simmer uncovered for 1 hour, stirring occasionally.
  • Remove the bay leaf and discard before serving.
  • Allow the chili to rest for 10 minutes before serving.

Notes

Skyline Chili is traditionally served over spaghetti and topped with shredded cheddar cheese, diced onions, and kidney beans for a full Cincinnati experience. Adjust the level of cayenne pepper to suit your heat preference, and consider preparing this dish a day ahead as the flavors meld beautifully overnight.
