Ingredients
  

  • 2 pounds beef chuck roast cut into 1-inch cubes
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 4 cups beef broth
  • 1 cup red wine
  • 3 cloves garlic minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 4 large carrots sliced
  • 4 medium potatoes diced
  • 1 large onion chopped
  • 2 stalks celery sliced
  • 1 cup frozen peas

Instructions
 

  • In a large mixing bowl, combine the flour, salt, and black pepper.
  • Coat the beef cubes with the flour mixture.
  • Heat the vegetable oil in a skillet over medium-high heat.
  • Brown the beef cubes on all sides.
  • Transfer the browned beef to the slow cooker.
  • Add the beef broth, red wine, garlic, tomato paste, Worcestershire sauce, and thyme to the slow cooker.
  • Stir to combine all ingredients well.
  • Add the carrots, potatoes, onion, and celery to the slow cooker.
  • Cover and cook on low for 8 hours.
  • Stir in the peas and cook for an additional 15 minutes.
  • Allow the stew to rest for 15 minutes before serving.

Notes

For a richer flavor, you can marinate the beef cubes in red wine overnight before cooking. Additionally, if you prefer a thicker stew, remove the lid during the last hour of cooking to allow some of the liquid to evaporate. Always taste and adjust the seasoning before serving to ensure the flavors are balanced to your liking.
