  • 1 Meat thermometer
  • 1 pair of tongs
  • 1 Basting brush
  • 1 serving platter

Ingredients

  • 4 pieces Pork Chops bone-in
  • 2 tablespoons Olive Oil
  • 1 tablespoon Salt
  • 1 tablespoon Black Pepper
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Garlic Powder
  • 1 tablespoon Brown Sugar
  • 1 cup BBQ Sauce

Instructions

  • Preheat your grill or smoker to 225°F (107°C).
  • In a small bowl, mix together the salt, black pepper, smoked paprika, garlic powder, and brown sugar.
  • Rub the pork chops with olive oil and then coat them evenly with the spice mixture.
  • Place the pork chops on the grill or smoker and close the lid.
  • Smoke the pork chops for about 45 minutes or until they reach an internal temperature of 145°F (63°C).
  • During the last 10 minutes of cooking, baste the pork chops with BBQ sauce.
  • Remove the pork chops from the grill and let them rest for 5 minutes on a serving platter before serving.

Notes

For best results, choose pork chops that are at least 1 inch thick to ensure they remain juicy during smoking. If you prefer a stronger smoky flavor, consider using wood chips like hickory or applewood during the smoking process. Adjust the seasoning to taste, and remember that letting the meat rest after cooking helps retain its juices, making it tender and flavorful.
