Ingredients
  

  • 1 pound Ground Italian Sausage
  • 1 tablespoon Olive Oil
  • 1 cup Onion chopped
  • 3 cloves Garlic minced
  • 2 tablespoons Tomato Paste
  • 1 teaspoon Red Pepper Flakes
  • 1 teaspoon Italian Seasoning
  • 4 cups Chicken Broth
  • 2 cups Crushed Tomatoes
  • 8 ounces Lasagna Noodles broken into pieces
  • 1 cup Ricotta Cheese
  • 1 cup Mozzarella Cheese shredded
  • 1/2 cup Parmesan Cheese grated
  • 1/4 cup Fresh Basil chopped

Instructions
 

  • Heat olive oil in a large soup pot over medium heat.
  • Add ground Italian sausage and cook until browned, breaking it apart with a wooden spoon.
  • Stir in chopped onion and minced garlic, cooking until the onion becomes translucent.
  • Mix in tomato paste, red pepper flakes, and Italian seasoning, cooking for one minute until fragrant.
  • Pour in chicken broth and crushed tomatoes, stirring to combine.
  • Bring the mixture to a boil and then reduce to a simmer.
  • Add broken lasagna noodles to the pot and cook until al dente.
  • In a small bowl, combine ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese.
  • Once noodles are cooked, remove the pot from heat and stir in the cheese mixture.
  • Let the soup rest for 5 minutes to thicken slightly.
  • Serve hot in bowls, garnished with remaining mozzarella and Parmesan cheeses and fresh basil.

Notes

For best results, monitor the noodles closely to prevent them from becoming too soft; they should be al dente for the ideal texture. Adjust the amount of red pepper flakes to control the spiciness to your liking. This soup can be refrigerated for up to 3 days, but the noodles may absorb more liquid over time, so you may need to add extra broth when reheating.
