Equipment

Ingredients
  

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 cup ricotta cheese
  • 1 cup fresh spinach chopped
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon black pepper
  • 1/4 cup butter
  • 2 cloves garlic minced

Instructions
 

  • In a large mixing bowl, combine flour and salt.
  • Create a well in the center and add eggs and olive oil.
  • Mix the dough by hand until ingredients are combined.
  • Knead the dough on a floured surface until smooth, about 10 minutes.
  • Wrap the dough in plastic and let it rest for 15 minutes.
  • In a bowl, mix ricotta, spinach, Parmesan, nutmeg, and black pepper to create the filling.
  • Roll out the dough using a rolling pin until thin.
  • Cut the dough into squares using a pasta cutter or knife.
  • Place a small amount of filling in the center of each square.
  • Fold the squares into triangles and seal edges by pressing them.
  • Bring a large pot of salted water to a boil.
  • Add ravioli to the boiling water and cook for 4-5 minutes.
  • In a skillet, melt butter and sauté garlic until fragrant.
  • Use a slotted spoon to transfer cooked ravioli to the skillet.
  • Toss ravioli in the garlic butter sauce before serving.

Notes

When making ravioli, be sure to roll the dough as thinly as possible without tearing it, to ensure a delicate pasta texture. Additionally, ensure the edges are well-sealed to prevent the filling from leaking out during cooking. Serve immediately for the best texture and flavor.
