Ingredients
  

  • 1 pound ground beef
  • 1 medium onion diced
  • 1 bell pepper diced
  • 2 clove garlic minced
  • 1 cup frozen corn kernels
  • 1 cup salsa
  • 1 packet taco seasoning
  • 1 box Jiffy cornbread mix
  • 1 egg
  • 1/3 cup milk
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Heat olive oil in a skillet over medium heat and add the ground beef.
  • Cook the ground beef until browned, then drain excess fat.
  • Add the diced onion, bell pepper, and garlic to the skillet and sauté until softened.
  • Stir in the corn, salsa, and taco seasoning, then cook for 5 more minutes.
  • Prepare Jiffy cornbread mix according to package instructions by combining it with egg and milk.
  • Pour the beef mixture into an oven-safe skillet or casserole dish.
  • Spread the cornbread batter evenly over the beef mixture.
  • Sprinkle the shredded cheddar cheese on top of the cornbread batter.
  • Bake in the preheated oven for 25-30 minutes until the cornbread is golden and cooked through.
  • Let the tamale pie rest for 10 minutes before serving.

Notes

For optimal taste, consider using freshly grated cheese as it melts better and offers a creamier texture. Adjust the spice level by choosing a mild or hot salsa, and feel free to add jalapeños for an extra kick. If you're short on time, canned corn can substitute for frozen corn.
