Ingredients
  

  • 400 grams tofu firm, cubed
  • 2 tablespoons vegetable oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 tablespoon ginger grated
  • 2 carrots sliced
  • 2 cups vegetable broth
  • 1 tablespoon soy sauce
  • 1 tablespoon miso paste
  • 1 cup spinach leaves
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions
 

  • Heat the vegetable oil in a large pot over medium heat.
  • Add the chopped onion and sauté until translucent.
  • Stir in the minced garlic and grated ginger, cooking for 1 minute.
  • Add the sliced carrots and sauté for 3 minutes.
  • Pour in the vegetable broth and bring to a simmer.
  • Stir in the soy sauce and miso paste until well combined.
  • Add the cubed tofu and simmer for 15 minutes.
  • Stir in the spinach leaves and cook until wilted.
  • Drizzle sesame oil before removing from heat.
  • Season with salt and pepper to taste.
  • Let the stew rest for 5 minutes before serving.

Notes

When cooking tofu stew, ensure that the tofu is firm and well-drained to maintain its texture during cooking. It's also important to not overcook the spinach to retain its vibrant color and nutritional value. Adjust the seasoning to your taste, and feel free to add other vegetables or spices to make the dish your own.
