Ingredients
  

  • 2 cup Corn kernels fresh or frozen
  • 1 tablespoon Olive oil
  • 1 cup Monterey Jack cheese shredded
  • 1/2 cup Cream cheese softened
  • 1/4 cup Sour cream
  • 1/4 cup Green onions chopped
  • 1 Jalapeño seeded and chopped
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1/4 teaspoon Garlic powder
  • 1 tablespoon Lime juice
  • 2 tablespoon Cilantro chopped

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Add corn kernels and sauté until golden brown, about 5 minutes.
  • In a mixing bowl, combine cream cheese, sour cream, Monterey Jack cheese, and lime juice.
  • Stir in sautéed corn, green onions, jalapeño, salt, black pepper, and garlic powder.
  • Transfer the mixture back to the skillet and cook on low heat until the cheese is fully melted and bubbly, about 10 minutes.
  • Remove from heat and let it rest for 5 minutes to thicken slightly.
  • Sprinkle chopped cilantro on top before serving.

Notes

To enhance the flavor, consider roasting the corn slightly longer until it gets a bit charred for a deeper taste. You can adjust the heat level by adding more or fewer jalapeños depending on your preference. This dip is best served warm with tortilla chips or fresh veggies for dipping.
