Ingredients
  

  • 2 tablespoon olive oil
  • 1 medium onion chopped
  • 2 clove garlic minced
  • 1 tablespoon ginger grated
  • 1 red bell pepper chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon coriander
  • 1/4 teaspoon cayenne pepper
  • 1 cup vegetable broth
  • 1 can diced tomatoes 14 oz
  • 1/2 cup creamy peanut butter
  • 1 can chickpeas 15 oz, drained and rinsed
  • 2 cups kale chopped
  • to taste salt and pepper
  • 1/4 cup roasted peanuts chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add onion and sauté until translucent, about 5 minutes.
  • Stir in garlic and ginger and cook for 1 minute.
  • Add bell pepper and sweet potato and cook for 5 minutes, stirring occasionally.
  • Mix in cumin, coriander, and cayenne pepper and cook for 1 minute.
  • Pour in vegetable broth and diced tomatoes, stirring to combine.
  • Bring to a boil, then reduce heat and simmer for 15 minutes.
  • Stir in peanut butter until well incorporated.
  • Add chickpeas and kale, cooking for another 5 minutes.
  • Season with salt and pepper to taste.
  • Let the stew rest for 10 minutes before serving.
  • Garnish with chopped roasted peanuts.

Notes

For a richer flavor, consider adding a splash of coconut milk to the stew. Adjust the level of spiciness by varying the amount of cayenne pepper based on your preference. This stew pairs well with a side of rice or flatbread, which can help balance the rich, nutty flavors. If you prefer a smoother texture, you can partially blend the stew with an immersion blender before adding the chickpeas and kale.
