Ingredients
  

  • 1 cup Unsweetened applesauce
  • 1/2 cup Granulated sugar
  • 1/2 cup Brown sugar packed
  • 1/2 cup Vegetable oil
  • 2 Large eggs
  • 1 1/2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 1/2 teaspoon Ground nutmeg
  • 1/4 teaspoon Ground cloves
  • 1/4 teaspoon Salt
  • 1/2 cup Raisins optional
  • 1/2 cup Chopped walnuts optional

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Grease a 9x9 inch baking pan and set aside.
  • In a mixing bowl, whisk together applesauce, granulated sugar, brown sugar, and vegetable oil until well combined.
  • Add eggs to the mixture and whisk until fully incorporated.
  • In another bowl, sift together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Fold in raisins and walnuts if using.
  • Pour the batter into the prepared baking pan and spread evenly.
  • Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan on a cooling rack for 10 minutes before serving.

Notes

For best results, ensure that all ingredients are at room temperature before beginning the preparation. Using unsweetened applesauce helps control the sweetness of the cake, and the addition of raisins and walnuts is optional but adds a nice texture. Be careful not to overmix the batter once the dry ingredients are added, as this can result in a denser cake.
