Ingredients
  

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 2 tablespoons unsalted butter melted
  • 1 large egg
  • 1/2 cup apple butter
  • 1/4 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract

Instructions
 

  • In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, combine the buttermilk, melted butter, egg, apple butter, cinnamon, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and gently mix until just combined.
  • Heat a non-stick skillet over medium heat.
  • Pour 1/4 cup of the batter onto the skillet for each pancake.
  • Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  • Flip the pancakes and cook for another 2 minutes until golden brown.
  • Transfer pancakes to a plate and allow them to rest for 5 minutes before serving.

Notes

For fluffier pancakes, avoid overmixing the batter; it's okay if there are a few lumps. You can keep the pancakes warm in a low oven as you cook the remaining batter. For added flavor, consider topping the pancakes with sliced apples or a sprinkle of powdered sugar before serving.
