Apple Cabbage Detox Stew with Butternut Squash

Ingredients
  

  • 2 tablespoon olive oil
  • 1 medium onion diced
  • 2 clove garlic minced
  • 1 medium butternut squash peeled and cubed
  • 1 small head cabbage chopped
  • 2 medium apples peeled, cored, and chopped
  • 4 cup vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground cinnamon

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add the diced onion and minced garlic, sauté until the onion is translucent.
  • Stir in the cubed butternut squash and cook for 5 minutes.
  • Add the chopped cabbage and apples to the pot.
  • Pour in the vegetable broth, then season with salt, pepper, thyme, and cinnamon.
  • Bring the mixture to a boil, then reduce the heat to low and simmer for 30 minutes.
  • Check the squash for tenderness and adjust seasoning if needed.
  • Remove from heat and let the stew rest for 10 minutes before serving.
  • Ladle the stew into bowls and serve warm.

Notes

For a richer flavor, consider adding a splash of apple cider vinegar or a pinch of nutmeg. If you prefer a thicker stew, mash some of the butternut squash cubes before serving. This dish can also be made ahead and tastes even better the next day as the flavors meld together.
