Ingredients
  

  • 1 pound fresh okra sliced
  • 2 tablespoon olive oil
  • 1 large onion diced
  • 2 cloves garlic minced
  • 3 carrots peeled and sliced
  • 1 cup apple cider
  • 2 cup vegetable broth
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 2 tablespoon tomato paste

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion and minced garlic to the pot and sauté until onion is translucent.
  • Stir in the sliced okra and carrots and cook for another 5 minutes.
  • Pour in the apple cider and vegetable broth, stirring to combine.
  • Season with salt, black pepper, and smoked paprika.
  • Add tomato paste and stir thoroughly until it is well incorporated.
  • Bring the stew to a boil, then reduce the heat to low and let it simmer for 30 minutes.
  • Stir occasionally to prevent sticking and ensure even cooking.
  • Remove from heat and let the stew rest for 10 minutes before serving.
  • Serve hot and enjoy the flavors.

Notes

For extra depth of flavor, consider adding a pinch of cayenne pepper for some heat or a splash of lemon juice for brightness just before serving. If you prefer a thicker stew, you can simmer it uncovered for a few extra minutes to allow more liquid to evaporate. Fresh herbs like parsley or cilantro can be added as a garnish for an additional layer of freshness.
