Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 1/2 cups rolled oats
  • 1 cup dried apples chopped
  • 1/2 cup walnuts chopped

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the butter, granulated sugar, brown sugar, and vanilla extract using an electric mixer until light and fluffy.
  • Add the eggs one at a time, beating well after each addition.
  • In a medium mixing bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Stir in the rolled oats, dried apples, and chopped walnuts using a silicone spatula.
  • Drop rounded tablespoons of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  • Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
  • Transfer the cookies to a cooling rack to cool completely.

Notes

For a more pronounced apple flavor, consider adding a bit of apple pie spice to the dough. If you prefer softer cookies, reduce the baking time slightly. Store the cookies in an airtight container to maintain their crisp texture. You can also substitute pecans for walnuts if desired.
