Apple Empanadas

Ingredients
  

  • 2 cup all-purpose flour
  • 1/2 cup unsalted butter chilled and diced
  • 1/4 teaspoon salt
  • 1/3 cup ice water
  • 3 apples peeled, cored, and diced
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 egg beaten
  • 1 tablespoon milk

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a mixing bowl, combine flour and salt.
  • Cut in the butter using a fork until the mixture resembles coarse crumbs.
  • Stir in the ice water, a tablespoon at a time, until the dough comes together.
  • Wrap the dough in plastic wrap and refrigerate for 15 minutes.
  • In another bowl, mix diced apples, sugar, cinnamon, and lemon juice.
  • Roll out the dough on a floured surface to about 1/8 inch thick.
  • Cut out circles using a round cutter or a bowl.
  • Place a spoonful of the apple mixture in the center of each circle.
  • Fold the dough over the filling to create a half-moon shape.
  • Use a fork to press and seal the edges.
  • Place the empanadas on a baking sheet.
  • Mix the beaten egg with milk and brush the tops of the empanadas.
  • Bake in the oven for 20-25 minutes until golden brown.
  • Let them cool for 10 minutes before serving.

Notes

For extra crispiness, you can sprinkle a bit of sugar on top of the empanadas before baking. Additionally, ensure your butter is well-chilled before incorporating it into the dough for a flakier crust. If the dough becomes too sticky while rolling, return it to the fridge for a few minutes to firm up.
