Ingredients
  

  • 4 large poblano peppers
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 cup cooked quinoa
  • 1 apple cored and diced
  • 1/2 cup black beans drained and rinsed
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheese

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Cut the tops off the poblano peppers and remove the seeds.
  • In a large skillet, heat olive oil over medium heat.
  • Add diced onion and minced garlic to the skillet and sauté until the onion is translucent.
  • Stir in cooked quinoa, diced apple, black beans, ground cumin, cinnamon, salt, and black pepper.
  • Cook the mixture for about 5 minutes, stirring occasionally.
  • Stuff each poblano pepper with the quinoa and apple mixture.
  • Place the stuffed peppers in a baking dish.
  • Sprinkle shredded cheese on top of each stuffed pepper.
  • Bake in the preheated oven for 25 minutes, or until the peppers are tender and the cheese is melted.
  • Let the stuffed peppers rest for 5 minutes before serving.

Notes

For extra flavor, consider roasting the poblano peppers prior to stuffing them, as this will enhance their sweetness and make them more tender. Additionally, you can experiment with different types of cheese or add a sprinkle of fresh cilantro on top before serving for added freshness.
