Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup peanut butter creamy
  • 1/4 cup honey
  • 1/4 cup brown sugar
  • 1 egg large
  • 1 cup apple peeled and grated
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 cup chopped nuts optional

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease or line a muffin tin.
  • In a mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, and salt.
  • In another bowl, combine the applesauce, peanut butter, honey, brown sugar, and egg until smooth.
  • Stir in the grated apple, milk, and vanilla extract to the wet mixture.
  • Gradually add the dry ingredients into the wet ingredients, mixing until just combined.
  • Fold in the cinnamon and chopped nuts, if using.
  • Divide the batter evenly among the prepared muffin tin cups.
  • Bake in the preheated oven for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  • Remove the muffins from the oven and let them cool in the tin for 5 minutes.
  • Transfer the muffins to a cooling rack to cool completely before serving.

Notes

For best results, use fresh, crisp apples such as Granny Smith or Honeycrisp, which provide a nice balance of sweetness and tartness. Adjust the amount of honey based on the sweetness of the apples you choose. Additionally, ensure that the peanut butter is well-mixed and creamy to avoid clumps in your batter.
