Ingredients
  

  • 1 cup applesauce
  • 2 ripe bananas mashed
  • 2 large eggs
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Grease the loaf pan with a bit of oil or butter.
  • In a mixing bowl, whisk together the applesauce, mashed bananas, eggs, sugar, oil, and vanilla extract until smooth.
  • In another bowl, combine the flour, baking soda, salt, cinnamon, and nutmeg.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  • Bake in the preheated oven for 50 minutes or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and let the bread cool in the pan for 10 minutes.
  • Transfer the bread to a cooling rack and let it cool completely before slicing.

Notes

For best results, make sure your bananas are overripe as this will enhance the sweetness and flavor of the bread. Additionally, do not overmix the batter to ensure a tender texture. If desired, you can add nuts or chocolate chips for extra flavor and texture.
