Ingredients
  

  • 1 cup mashed bananas
  • 1/2 cup unsweetened applesauce
  • 1/4 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts optional

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Line the muffin tin with paper muffin liners.
  • In a large mixing bowl, combine mashed bananas, applesauce, vegetable oil, sugar, vanilla extract, and eggs.
  • In a medium mixing bowl, whisk together flour, baking soda, cinnamon, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the chopped walnuts if using.
  • Divide the batter evenly among the muffin liners, filling each about 3/4 full.
  • Bake in the preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool in the tin for 10 minutes before transferring them to a wire rack to cool completely.

Notes

For a healthier alternative, you can substitute whole wheat flour for half of the all-purpose flour. If you prefer a sweeter muffin, consider adding a handful of chocolate chips to the batter. Make sure not to overmix the batter to keep the muffins light and fluffy. Store any leftovers in an airtight container for up to 3 days.
