Ingredients
  

  • 1 cup unsweetened applesauce
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts optional
  • 8 ounces cream cheese softened
  • 1/4 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Grease a 9-inch cake pan and set aside.
  • In a mixing bowl, whisk together flour, sugar, baking soda, cinnamon, nutmeg, and salt.
  • Add applesauce, vegetable oil, eggs, and vanilla extract to the dry ingredients and mix until combined.
  • Fold in chopped walnuts if using.
  • Pour the batter into the prepared cake pan.
  • Bake in the preheated oven for 30 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.
  • In a separate bowl, beat cream cheese and butter until smooth.
  • Gradually add powdered sugar and vanilla extract, and continue beating until the icing is fluffy.
  • Once the cake is completely cooled, spread the cream cheese icing evenly over the top using a spatula.
  • Let the cake rest for 10 minutes before serving.

Notes

For the best results, ensure all ingredients are at room temperature before beginning the recipe, especially the cream cheese and butter for smooth icing. If you prefer a less sweet cake, you can reduce the amount of sugar in the batter. Feel free to get creative with the spices by adding a pinch of cloves or ginger for extra warmth.
