Ingredients
  

  • 1 cup unsweetened applesauce
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup chopped walnuts
  • 1 tablespoon powdered sugar

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, whisk together the applesauce, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
  • In a separate bowl, mix the flour, baking soda, cinnamon, and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Fold in the chopped walnuts.
  • Pour the batter into a greased 9-inch baking pan.
  • Bake in the preheated oven for 40 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes, then transfer to a cooling rack.
  • Dust the cake with powdered sugar before serving.

Notes

To enhance the flavor of your applesauce coffee cake, you can add a pinch of nutmeg or cardamom to the dry ingredients. Also, ensure that the applesauce is unsweetened to balance the sweetness from the sugars. For a more robust flavor, try using toasted walnuts or substituting pecans.
