Ingredients
  

  • 4 russet potatoes large, peeled and cubed
  • 1 cup applesauce unsweetened
  • 2 tablespoon butter
  • 1/2 cup milk warm
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley chopped (optional)

Instructions
 

  • Boil the potatoes in a large pot of salted water until tender, about 20 minutes.
  • Drain the potatoes using a colander and return them to the pot.
  • Add the butter and warm milk to the potatoes and mash until smooth.
  • Stir in the applesauce, salt, and black pepper until well combined.
  • In a frying pan, heat a small amount of oil over medium heat and toast the mustard seeds until they begin to pop.
  • Add the toasted mustard seeds to the mashed potato mixture and stir.
  • Transfer the mashed potatoes to a serving bowl and let them rest for 5 minutes.
  • Garnish with fresh parsley if desired before serving.

Notes

When boiling the potatoes, ensure they are evenly cut to ensure uniform cooking. Toasting the mustard seeds adds a nutty flavor and a slight crunch, enhancing the dish's texture. If you prefer a creamier consistency, adjust the amount of milk to your preference. For added flavor, consider incorporating a dollop of sour cream or a sprinkle of cheese to your mashed potatoes before serving.
