Ingredients
  

  • 1 cup Unsweetened Applesauce
  • 1/2 cup Unsalted Butter softened
  • 1 cup Brown Sugar packed
  • 2 teaspoons Vanilla Extract
  • 2 cups Rolled Oats
  • 1 cup All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Ground Cinnamon
  • 1/2 teaspoon Salt
  • 1/2 cup Raisins optional

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
  • Stir in the applesauce and vanilla extract until well combined.
  • In a medium mixing bowl, whisk together the rolled oats, flour, baking soda, cinnamon, and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • If using, fold in the raisins gently.
  • Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 10 minutes or until the edges are golden brown.
  • Remove from the oven and let the cookies rest on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

When making applesauce oatmeal cookies, ensure that your butter is soft enough to blend easily with the sugar, as this will help achieve a smooth and even texture in the dough.
