Ingredients
  

  • 1 cup applesauce
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup grated zucchini
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Grease a loaf pan and set aside.
  • In a large mixing bowl, whisk together applesauce, sugar, oil, and eggs until well combined.
  • In a medium mixing bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Fold in the grated zucchini and vanilla extract with a spatula.
  • Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  • Bake in the preheated oven for 50 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For the best results, ensure the zucchini is finely grated to blend seamlessly into the bread batter, and consider using unsweetened applesauce to control the sweetness level. Additionally, you may add nuts or raisins for extra texture and flavor if desired.
