Ingredients
  

  • 4 cups apricots sliced
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup unsalted butter melted
  • 1/2 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Grease a baking dish with a small amount of butter.
  • In a medium mixing bowl, combine sliced apricots, 1/2 cup sugar, and lemon juice.
  • Pour the apricot mixture into the prepared baking dish.
  • In the same bowl, whisk together flour, remaining 1/2 cup sugar, baking powder, and salt.
  • Stir in melted butter and milk until a smooth batter forms.
  • Pour the batter evenly over the apricots in the baking dish.
  • Sprinkle ground cinnamon on top of the batter.
  • Bake in the preheated oven for 35 minutes or until the top is golden brown and bubbling.
  • Remove from the oven and allow to rest for 10 minutes before serving.

Notes

For the best flavor, use ripe apricots that are slightly soft to the touch. If fresh apricots are not available, canned apricots can be used, but make sure to drain them well. To add a bit of crunch, consider sprinkling some chopped nuts such as almonds or pecans on top before baking. Serve the cobbler warm with a scoop of vanilla ice cream or a dollop of whipped cream for a delightful treat.
