Apricot Jam

Equipment

  • 1 Large pot
  • 1 Wooden spoon
  • 1 Ladle
  • 1 jar funnel
  • 4 sterilized jars with lids

Ingredients
  

  • 2 pound fresh apricots pitted and chopped
  • 3 cup granulated sugar
  • 1/4 cup lemon juice
  • 1/2 teaspoon vanilla extract

Instructions
 

  • Place the chopped apricots in a large pot.
  • Add the granulated sugar and lemon juice to the pot.
  • Stir the ingredients over medium heat until the sugar dissolves.
  • Bring the mixture to a boil, stirring frequently.
  • Reduce the heat and simmer the mixture for 25-30 minutes until it thickens.
  • Add vanilla extract and stir well.
  • Use a ladle and jar funnel to pour the hot jam into sterilized jars.
  • Seal the jars with lids and let them cool to room temperature.

Notes

Use ripe apricots for the best flavor, and ensure jars are fully sterilized to prevent spoilage. If you prefer a smoother texture, use an immersion blender to puree the jam before jarring. For longer shelf life, consider processing the filled jars in a hot water bath for 10 minutes.
