Ingredients
  

  • 6 cups chicken or vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon ginger minced
  • 2 cloves garlic minced
  • 1 carrot julienned
  • 1 red bell pepper sliced
  • 4 ounces mushrooms sliced
  • 6 ounces rice noodles
  • 1 cup cooked chicken shredded (optional)
  • 2 green onions sliced
  • 1/4 cup cilantro chopped
  • 1 lime cut into wedges
  • Salt and pepper to taste

Instructions
 

  • In a large pot, heat the sesame oil over medium heat.
  • Add the minced ginger and garlic, and sauté for 1 minute until fragrant.
  • Pour in the chicken or vegetable broth and bring to a boil.
  • Stir in the soy sauce, carrots, red bell pepper, and mushrooms.
  • Reduce the heat to a simmer and cook for 10 minutes until the vegetables are tender.
  • Add the rice noodles to the pot and cook for 5 minutes until they are soft.
  • If using, stir in the cooked chicken and heat through.
  • Season the soup with salt and pepper to taste.
  • Remove from heat and let the soup rest for 5 minutes.
  • Serve the soup hot, garnished with sliced green onions, chopped cilantro, and lime wedges.

Notes

For the best flavor, consider using homemade broth if possible, and adjust the seasoning to your preference, adding more soy sauce or lime juice for extra flavor. Additionally, feel free to customize the vegetables and protein based on what you have on hand, as this soup is quite versatile.
