Ingredients
  

  • 8 ounces rotini pasta
  • 2 cups cherry tomatoes halved
  • 2 avocados diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup feta cheese crumbled

Instructions
 

  • Bring a large pot of salted water to a boil.
  • Cook the rotini pasta according to package instructions until al dente.
  • Drain the pasta in a colander and rinse it with cold water.
  • In a large mixing bowl, combine cherry tomatoes, avocados, red onion, and cilantro.
  • Add the cooled pasta to the mixing bowl.
  • In a small bowl, whisk together lime juice, olive oil, salt, and black pepper.
  • Pour the dressing over the pasta mixture and toss to combine.
  • Gently mix in the crumbled feta cheese.
  • Allow the salad to rest for 10 minutes before serving to let the flavors meld.

Notes

For the best results, use ripe avocados for a creamy texture and fresh lime juice for a zesty flavor. Consider adding grilled chicken or shrimp for a more substantial meal. Adjust the seasoning as per your taste, and feel free to add more vegetables like cucumbers or bell peppers for extra crunch.
