Ingredients
  

  • 1 pound bacon chopped
  • 1 large onion diced
  • 3 clove garlic minced
  • 1/4 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1/2 cup brewed coffee
  • 2 tablespoon maple syrup
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper

Instructions
 

  • Heat a large skillet over medium heat and cook the bacon until it is crispy, about 10 minutes.
  • Remove the bacon from the skillet using a slotted spoon and place it on a paper towel-lined plate to drain.
  • Reserve about 2 tablespoons of bacon fat in the skillet and discard the rest.
  • Add the diced onion to the skillet and cook until it becomes translucent, about 5 minutes.
  • Stir in the minced garlic and cook for an additional 1 minute.
  • Add the brown sugar, apple cider vinegar, brewed coffee, and maple syrup to the skillet and mix well.
  • Return the cooked bacon to the skillet and stir to combine with the other ingredients.
  • Season the mixture with black pepper and cayenne pepper.
  • Reduce the heat to low and let the mixture simmer until it thickens, about 20-30 minutes.
  • Remove the skillet from heat and let the bacon jam rest for 10 minutes.
  • Transfer the bacon jam to an airtight jar for storage once it has cooled.

Notes

For best results, use thick-cut bacon to ensure a hearty texture in your bacon jam. Adjust the sweetness or spiciness by varying the amount of brown sugar or cayenne pepper to suit your taste. This jam pairs wonderfully with cheese, toast, or as a topping for burgers, so feel free to get creative with its use.
