Ingredients
  

  • 1 pound bacon chopped
  • 1 large onion finely chopped
  • 2 clove garlic minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1/4 cup apple cider vinegar
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 1 pound tomatoes diced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Cook the chopped bacon in a large skillet over medium heat until crispy.
  • Remove the bacon from the skillet and drain on paper towels.
  • Add the chopped onion to the bacon fat in the skillet and sauté until translucent.
  • Stir in the minced garlic, smoked paprika, and cayenne pepper, cooking for an additional minute.
  • Add apple cider vinegar, brown sugar, and maple syrup to the skillet, stirring to combine.
  • Return the bacon to the skillet and add the diced tomatoes, salt, and black pepper.
  • Reduce the heat to low and simmer the mixture for about 45 minutes, stirring occasionally.
  • Allow the jam to cool for 15 minutes before transferring it to an airtight container.

Notes

For best results, ensure the bacon is cooked to a crispy texture before adding it back to the jam mixture, as it will soften up during cooking. This jam can be stored in the refrigerator for up to two weeks and is perfect for adding a savory twist to your favorite sandwiches or burgers.
