Ingredients
  

  • 2 cups corn kernels thawed if frozen
  • 1 cup cheddar cheese shredded
  • 1/2 cup mozzarella cheese shredded
  • 1/2 cup cream cheese softened
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tablespoons jalapeno diced
  • 2 tablespoons green onions sliced
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit.
  • In a large mixing bowl, combine corn kernels, cheddar cheese, mozzarella cheese, cream cheese, sour cream, and mayonnaise.
  • Add jalapeno, green onions, garlic powder, salt, and black pepper to the bowl and mix well until all ingredients are evenly combined.
  • Transfer the mixture into a baking dish, spreading it evenly with a spatula.
  • Place the baking dish in the preheated oven and bake for 25 minutes until the cheese is melted and bubbly.
  • Remove the dish from the oven using oven mitts and let it rest for 5 minutes before serving.

Notes

For a spicier dip, consider adding more jalapenos or a dash of cayenne pepper. You can also use fresh corn instead of frozen for a more vibrant flavor. Serve the dip with your choice of tortilla chips, sliced baguette, or fresh veggies for dipping. For an added touch, garnish with extra green onions or cilantro before serving.
