Ingredients
  

  • 200 grams Feta cheese crumbled
  • 4 large Eggs
  • 1 tablespoon Olive oil
  • 1 teaspoon Oregano dried
  • 1/2 teaspoon Black pepper ground
  • 1/4 teaspoon Salt
  • 1 cup Cherry tomatoes halved
  • 1 tablespoon Fresh parsley chopped
  • 1/4 cup Red onion thinly sliced
  • 2 tablespoons Kalamata olives pitted and sliced

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Drizzle olive oil in an oven-safe skillet or baking dish.
  • Spread crumbled feta cheese evenly across the bottom of the dish.
  • Arrange cherry tomato halves, red onion slices, and kalamata olives over the feta.
  • Sprinkle oregano, salt, and black pepper over the top.
  • Make four small wells in the mixture and crack an egg into each well.
  • Bake in the preheated oven for 15-20 minutes until the egg whites are set but yolks are still runny.
  • Remove from the oven and let rest for 5 minutes.
  • Garnish with fresh parsley before serving.

Notes

For a creamier texture, you can add a splash of cream to the eggs before baking. Ensure that the feta is evenly crumbled to allow it to melt consistently throughout the dish. If you prefer firmer yolks, increase the baking time by a few minutes. Serve with crusty bread or a side salad for a complete meal.
