Ingredients
  

  • 2 ripe bananas mashed
  • 1/4 cup unsalted butter melted
  • 1/2 cup granulated sugar
  • 1 large egg beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips optional

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Line a baking sheet with a silicone baking mat or parchment paper.
  • In a large mixing bowl, combine the mashed bananas, melted butter, sugar, beaten egg, and vanilla extract, and mix until smooth.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the mini chocolate chips if using.
  • Use a tablespoon to drop spoonfuls of batter onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 18-20 minutes, or until golden and a toothpick inserted in the center comes out clean.
  • Allow the banana bread bites to cool on the baking sheet for 5 minutes before transferring them to a cooling rack to cool completely.
  • Serve warm or at room temperature.

Notes

For best results, ensure the bananas are very ripe to enhance the sweetness and flavor of the bites. If desired, you can add nuts or dried fruits for extra texture and flavor. Store any leftovers in an airtight container at room temperature for up to 3 days.
