Ingredients
  

  • 1 cup mashed ripe bananas
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup chopped walnuts optional

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Grease the loaf pan and set aside.
  • In a large mixing bowl, combine mashed bananas, pumpkin puree, vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract.
  • In a medium mixing bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the chopped walnuts if using.
  • Pour the batter into the prepared loaf pan.
  • Bake in the preheated oven for 60 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For best results, ensure the bananas are overripe as they will provide the best flavor and moisture. You can also add chocolate chips or dried fruit for additional texture and flavor. If your bread is browning too quickly in the oven, cover it loosely with aluminum foil for the last 15 minutes of baking.
